Quinoa Oaty Bars

If you have a sweet tooth and you are looking for a healthy alternative to those pesky processed packets of rubbish that line our supermarkets then you’ve come to the right place!

I wanted to recreate a bar that I had the pleasure of sampling at a cake sale many years ago – I remember they were half flapjack and half cornflake cake and they were so delicious, they had chewy raisins, they were made with golden syrup and they certainly weren’t gluten or dairy free. I remembered about these one random day as we were reminiscing about school sports day and the little cake sale that would be there and that’s when I set about re-creating these beauties.

They are packed with healthy fats from coconut oil, nuts and seeds and they are sweetened from natural coconut blossom syrup.


Ingredients

{Gluten, dairy, refined sugar free}

5oz coconut oil

8oz gluten free oats

20g ground flaxseeds

20g quinoa pops or gluten free corn flakes

1 tablespoon nut butter – I used walnut butter but you could use almond butter or whichever is your favourite!

3 tablespoons of coconut blossom syrup (If you cant find this you could use brown rice syrup)

25g almonds or your other favourite nuts roughly chopped

100g small dried chopped dates and raisins


Instructions

1.Melt the coconut oil, syrup and nut butter in a pan for a few minutes.

2.Next stir in the oats, flaxseed, quinoa pops or cornflakes, nuts and fruit and combine until all mixed together.

3.Press in to a pre-lined baking tray and bake in the oven at 175degrees in a fan assisted oven for 20-25 minutes.

4.Enjoy these as a quick breakfast on the run or as an afternoon snack πŸ™‚
