Superfood Chinese Quinoa

New year new me?? NER. New year, better me!

That’s my philosophy anyway.

I believe that everything that has happened to us makes us who we are today. So I say ditch the resolutions because to resolve means to find a solution to a problem… and you my friend are not a problem!

The way you lived your life last year was necessary for your growth. Now it’s time to reflect and to learn. To create an intention, a spark of magic, rooted in self-love and backed with action.

I don’t know about you but I feel so excited for 2016 and so inspired and motivated to achieve my goals this year. I have never wanted them more than now and I intend on making them happen. Positivity is everything, and a little self belief and self love. This year I will hopefully be graduating (again) and starting up my own business which scares me but it also sets my soul on fire because my passion for what I do is so real.

If you are in need of a little bit of new years inspiration, whether it be a little encouragement to believe in yourself or a little nudge to start off that healthy eating plan then please know that you are not the only one, you are AMAZING and you CAN DO IT. Anything is possible when we put our minds to it. I truly believe that.

I’ve been working on a super yummy recipe for you that will hopefully inspire you to get your new year off to a healthy start. It’s comfort food at its best and it’s so quick to make too, so I hope you can see that healthy eating does not have to take hours of work. I have been craving oriental flavours recently so I decided to create a healthy take on egg fried rice – one of my childhood faves that brings back great memories of going to Chinese restaurants with my family for special occasions & spinning round that badass Lazy Susan to make sure I got more prawn crackers than my brother.

There is one slight alteration as the name implies, instead of using rice I have used quinoa because unlike rice it contains a complete amino acid profile, making it a complete protein. If you can’t bare quinoa for whatever reason then you can substitute for brown rice, but I promise that the quinoa tastes super yummy. I have of course swapped a few of the other ingredients around too 😉

Say hello to my super star ingredients… coconut oil, kale, seaweed, broccoli and sesame seeds.

Not only is this dish packed with delicious greens that are full of antioxidants but it is also the perfect balance of macronutrients, with a good amount of protein from the eggs, quinoa and sesame seeds. The iodine from the seaweed will give your thyroid a little boost if it is feeling a tad sluggish after Christmas. I like to add turmeric to almost all of my food because I can’t get enough of it’s warming earthy flavour and its awesome set of health benefits too! There will be a post up shortly all about turmeric and why we should all be consuming it regularly.

Anyway I hope you find joy and inspiration in making AND eating this!

Ingredients

Serves 2

 

Large dollop of coconut oil

3 cups of cooked quinoa (You can use red or white)

3 organic free range eggs

2 large handfuls of kale (I use purple)

3 spring onions

Half head of broccoli chopped in to tiny bits

1 large handful spinach

1 tablespoon tamari

1 tablespoon of green nori flakes*

*(I use Clearspring, but don’t worry if you can’t get your hands on any – you can leave it out)

1 teaspoon turmeric

1 teaspoon Chinese five spice

1 red chilli finely chopped (you can also use chilli flakes)

1 tablespoon fresh ginger finely chopped

1 handful of cashew nuts

1 tablespoon black sesame seeds

How to make 

Heat the coconut oil in a frying pan or wok if you have one.

Add in the spring onion, chilli, ginger, turmeric and five spice, fry for a couple of minutes stirring continuously.

Add in the broccoli and the tamari and fry for a further 5 minutes.

Next add in the kale and cook until slightly wilted.

Add in the quinoa and stir until everything is coated. Next make a well in the middle of the pan to crack your eggs in to.

Let the eggs fry a little in the middle of the pan before stirring everything together until the eggs are evenly distributed.

Add some more tamari if it gets too dry.

Sprinkle over your seaweed sprinkles, cashew nuts and sesame seeds.

Serve straight away in your favourite bowls, enjoy and feel nourished!
