I’ve got a little bit of an obsession with porridge at the moment. I think now that we are well and truly in to Autumn and nearing Winter it is just the perfect comfort food to warm me up in the mornings. This recipe was dreamt up after I had made an apple crumble the other week, it was so good that I thought about having it for breakfast. I decided that dessert before 9am wouldn’t really be acceptable and so instead I decided to make a healthy breakfast version of this classic and delicious pudding instead!
It’s so easy to make, only will take you 10 minutes to whip up. The caramel flavours come from the Lucuma powder which is a super nutritious Peruvian fruit loved by the Incas. It is a delicious addition to any cakes, brownies, homemade chocolate, and definitely this porridge! This natural sweetener that comes with many health benefits. These include improved immune function, improved blood sugar regulation, not to mention it being a rich source of essential minerals and vitamins containing beta carotene, iron, zinc, vitamin B3, calcium, and protein.
The old saying “an apple a day keeps the doctor away” might just turn out to be a pretty true cliché. The apple provides over four grams of fibre in every one, apples are an ultimate high fibre food and a great way to make sure you’re covering your bases of 25–30 grams daily. Apples are especially known for providing pectin, a type of soluble fibre that works by binding to fatty substances in the digestive tract — including cholesterol and toxins — and promoting their elimination.
The fibre found in apples helps make you feel full, since it expands in your intestines and takes up volume, but it’s also important for detoxification. Pectin regulates the body’s use of sugars and cholesterol while also helping to cleanse the blood and digestive tract.
This breakfast really is good enough to eat as a dessert however, also totally acceptable and healthy enough for breakfast!!
1/2 cup gluten free oats
1 cup of nut milk
2 heaped tsp lucuma powder
1 tsp cinnamon
1 tsp coconut oil
1 organic apple (skin on)
Chia seeds and pecans to sprinkle on top
A drizzle of raw honey (optional)
How to make
Wash and grate the apple using a grater. Heat the coconut oil in a pan and sweat the majority of grated apple down for about ten minutes (saving a small amount for a garnish), stir in the cinnamon and lucuma powder until everything is combined.
Then add in the oats and milk and stir through until cooked.
Once the oats have soaked up the milk and the porridge is at your desired consistency, spoon in to your favourite bowl and top with chia, pecans, apple, a little dusting of cinnamon and a drizzle of raw honey!
