Praise the Lord… Spring is here and summer is on it’s way! I was optimistic this morning and wore my open toe shoes to work… Probably a little premature but I don’t care. I’m so ready for the summer and sunshine to arrive!
I feel it’s been a long old winter and it’s certainly not my favourite season. I’m not a fan of coats and hats and being cold, give me flipflops, summer dresses and outdoor BBQ’s any day!
I’m celebrating this sunny day with a summery recipe for you all! It’s so refreshing and unlike some smoothie bowls it does contain protein in the form of nuts so it’s not just pure sugar.
You can actually just top it with whatever fruits and pretty things you like too – this was just an idea of mine.
This is the perfect breakfast enjoyed in the sun or a sunny snack!
1 large frozen banana
1 ½ cups frozen raspberries
½ cup oat milk
2 Tbsp. almond butter
1 Tbsp. honey, plus additional for drizzling
5 strawberries, sliced
¼ cup granola
2 Tbsp. shredded coconut
Handful cacao nibs
Using a food processor, blend the banana, 1 cup of the raspberries, oat milk, almond butter, and 1 tablespoon of the honey until smooth. Transfer to a bowl and top with the strawberries, granola, coconut, remaining ½ cup raspberries, and a drizzle of honey.
