Don’t you just love a homemade present? Nothing speaks love more than the thought and effort of a homemade gift! Especially if it is edible too! I love to make homemade gifts and always have done. I always find that people really appreciate something that you have taken time and consideration over rather than just buying something. I have created these little valentines biscuits as a lovely treat for someone special. They are really light and crisp and totally more-ish! They look great if you stack them up, wrap them in cellophane and tie a lovely ribbon around them too.

They are of course gluten and dairy free. I add fresh ginger in to mine for added health benefits however you don’t have to if you find it over powering.

Ingredients

2 cups gluten free flour

1 tsp baking powder

1 tsp bicarb of soda

1 tsp cinnamon

2 tsp ground ginger

1 small chunk of fresh grated ginger

1 egg

125g vegan butter

¼ cup honey

½ cup coconut sugar or brown sugar

 

Method

In a bowl cream the butter and sugar, then add honey and egg and mix until combined. In a separate bowl mix together all the dry ingredients and then add to the wet.

Mix together and refrigerate as long as you have available, overnight or for a couple of days is best but at least 1 hour.

Remove dough from refrigerator and place on to floured surface and knead lightly.

Roll out to 5mm thickness and cut into heart shapes using a cookie cutter.

Bake in the oven for about 10 minutes. Leave to cool on trays for 5 mins and then transfer to cooking racks. You can decorate these however you like. I used a drizzle of icing sugar topped with rose petals.
